  • Tapenade – handmade with black Aragon olives, capers shallots and parsley
  • Salsa verde – classic Italian meat or fish accompaniment; dijon mustard and olve oil sauce with fresh herbs, capers and shallots.
  • Cherry tomato, coriander and ginger salsa – made with heirloom cherry tomatoes in sweet and sour syrup this is perfect for the fish
  • Salad Bar -Heirloom tomato and buffalo mozzarella – 4 types of local organic heirlooms; cherry, red, yellow and purple. Sliced with organic basil and imported Italian buffalo mozzarella
  • Escalivada – Catalunya’s excellent roast pepper and smoked aubergine salad
    • Potato salad – Ibicencan highly waxy red potatoes,  crushed with sliced green beans and parsley and tossed with olive oil and salt
    • Fennel, black olive and orange – paper-thin slices of fennel, fillets of Ibicencan late season oranges, black olives and chopped parsley with citrus dressing
    • Rocket and Parmesan – served absolutely simply with Maldon salt and lemon oil dressing
